    Brown Butter Apple Cider Blondies

    Brown butter brings depth of flavor to these Brown Butter Apple Cider Blondies with warm nutty notes. Boiled apple cider is the secret ingredient that amplifies the apple flavor.

    Here’s something I can’t get enough of lately – Brown Butter Apple Cider Blondies. They’re are filled with lightly spiced tender shredded apples and loads of chopped pecans. Brown butter adds craveable a toasty note. Although browning butter requires an extra step, it’s so worth it!
    One of my favorite ingredients to use in fall and winter months is boiled apple cider. I always purchase Vermont Boiled Cider from King Arthur Baking (or you could try making your own.). It is truly a wonderful addition to this recipe. Nobody’s paying me to say that! As an avid baker I use it in everything from apple pie to apple fritters. You can absolutely still make this recipe if you don’t have boiled cider on hand. See the recipe notes for my suggestions and substitutions.

    Browning butter is easy!
    Brown butter will elevate nearly any baked good. It’s a special ingredient. When making it, butter solids can change fast from light to brown on the stove top. So watch the butter carefully as it cooks. It has several bubbly/foamy stages, beginning with big shiny soapy bubbles. Then, that will subside to smaller bubbles followed by foam that will start to look golden. And that’s when you need to remove the saucepan from the heat.
    Pour the browned butter into a bowl with the milk solids that have browned and fallen to the bottom of the pan. Let it cool before using it in the batter.

    Get cookin’!
    Next, fry shredded apples in butter. How could that ever be a bad thing? Raw apples give off juices during baking, so cooking off some of that liquid in a saucepan just makes good sense. It also give you the opportunity to spice things up with a little cinnamon.

    Mix up the batter.
    All the best blondie ingredients are accounted for here. Such as lots of brown sugar. And this is the stage to add in a little boiled cider to give the apple flavor a boost! Next, mix in the dry ingredients and the pecans.

    13×9 love.
    Spread the batter evenly into a 13×9 inch pan. This recipe makes a big pan of blondies that is made for sharing! Then, you’ll bake it until golden and puffy. And all the while you can enjoy the fragrance that fills your kitchen (which beats any fancy seasonal candle, if you ask me).

    Creamy glaze flavored with boiled cider adds yet another layer of apple flavor. Spread it on and scatter the top with more chopped pecans.

    Instructions Fried ApplesMelt butter in a large saucepan over medium heat. Add grated apples and cinnamon and cook while stirring for about 4 minutes until the apples soften.Place fried apples in a bowl and cool.BlondiesPreheat the oven to 375°F. Coat nonstick cooking spray in a 13×9-inch baking pan.Melt butter in a saucepan over medium heat. Cook until the butter foams and steams. Swirl the pan as the foam subsides and closely watch as the butter turns golden brown and solids form. Pour the brown butter into a large mixing bowl and cool for about 15 minutes. Do not let solidify.After letting brown butter cool, add brown sugar, eggs, boiled cider and vanilla extract. Mix well. Add flour, baking powder and salt. Mix until just combined.Fold in the cooled fried apples and chopped pecans into the batter and pour into the prepared baking pan. Spread evenly.Bake blondie batter for 21-25 minutes, or until golden brown. Take out and cool completely.ToppingsWhisk powdered sugar, boiled cider and heavy cream together in a small bowl. Then, spread the glaze over blondies and sprinkle with pecans. Let stand for about 10 minutes.Cut into squares, serve and enjoy!
    NotesSubstitutions
    Substitute 1/4 cup regular apple cider for the boiled cider in the fried apple mixture. Cook the mixture down until all of the liquids have evaporated before using it in the batter. 
    Substitute 2 tablespoons regular apple cider for the boiled cider in the glaze recipe. Add a pinch of cinnamon to add a little color to the glaze, if desired.
    What to expect:
    This is a delicious, chewy fall treat that has huge apple flavor. It’s a great alternative to apple pie at Thanksgiving.
    Browned butter is easy to make but requires a watchful eye. Make it in a stainless saucepan so you can best judge its color. It will be much harder to judge the doneness in a dark nonstick pan.

    Peanut Butter Chocolate Chip Blondies

    Nothing beats the dynamic duo of chocolate and peanut butter! These Peanut Butter Chocolate Chip Blondies are an easy weeknight dessert or lunchbox treat.

    If you’re looking for comfort on a plate – here it is! Eating too many of these peanut butter chocolate chip blondies is so easy. I’ve had more than my share and I’m not even sorry. Each slice is chewy, chocolaty, and incredibly peanut buttery with both flavors of chips sprinkled throughout.

    Who doesn’t love a good 13×9 pan dessert? The golden brown pillowed corners are a little chewier than the middle, so that’s the slice I went for first! These cut neatly, so I could see them being a nice addition to kid’s lunches, or any time you need a totable sweet. I adapted this recipe from a Bake Sale book I purchased years ago. So of course these would be perfect for bake sales (when we’re allowed to have those again!).

    With a creamy batter composed of butter, brown sugar, and peanut butter, there’s nothing not to love. It would be super easy to switch up this recipe with M&M’s or Reese’s Pieces, but honestly it’s wonderful as-is. If peanut allergies are an issue, then the creamy peanut butter can be swapped out for almond butter or sunflower butter. You could also omit the peanut butter chips and substitute vanilla or butterscotch morsels.

    Freeze some for later!

    There will be plenty to share, but no judgement here if you’re planning to keep them all for yourself. These freeze well (and taste pretty good straight from the freezer!) so you can enjoy some now and put the rest on ice. I like to slice them up and wrap them individually before freezing because it’s easier to grab one or two portions. And it takes less time to thaw.

    Making this recipe gluten-free would be easy using a 1-to-1 flour. King Arthur Baking’s Measure for Measure Flour is my favorite! I always keep a bag on hand because I have family with those dietary considerations.

    Peanut Butter Chocolate Chip Blondies

    These blondie bars are packed with a double dose of peanut butter flavor with creamy peanut butter and peanut butter chips in the mix. Mini chocolate chips disperse evenly and give the perfect amount of chocolate flavor against all that peanut butter. If you don’t have mini chips, regular chips will work.

Beat together until well combined. Add in vanilla and eggs; mix well.Add the flour mixture to the creamed mixture a little at a time, mixing on low speed. Fold in the peanut butter chips and 3/4 cup of the chocolate chips.Spread the dough into the prepared pan evenly. Sprinkle the top with the remaining 1/4 cup of mini chips and press lightly into the dough.Bake 18-22 minutes until golden brown on the edges, or until a toothpick inserted in the center comes out clean. Let cool completely in the pan before cutting.

    NotesIf peanut allergy is a consideration, shelf stable almond butter or sunflower butter will work in place of the creamy peanut butter. Swap the peanut butter chips for butterscotch or white chocolate morsels.

    Lemon Sugar Cookie Bars

    Lemon Sugar Cookie Bars are soft and chewy with lots of citrusy tang. They’re baked in a 13×9 inch dish which removes the hassle of forming individual cookies – just slice and enjoy!Hello, friends! I hope everyone is well and finding the baking ingredients needed to make all the comfort foods required for these days of sheltering. Thankfully, I am now stocked up on flour, yeast, and the other essentials that keep me working and doing what I love.Lately I’ve been craving the flavors of buttercream birthday cake, but I’ve been without the enthusiasm it takes to bake, fill, and frost an entire layer cake. Sugar cookie bars are a low lift stand-in with all of the nostalgic birthday flavors and lots of sprinkles! This recipe is a departure from the usual sugar cookie flavors of vanilla on vanilla (which is also delicious) and instead uses lots of lemon zest and fresh lemon juice to give these treats some zing!
    The first order of business is to make lemon sugar for the cookie dough. Zest an entire lemon over a bowl of sugar and blend together with your fingertips. The citrus oils disperse through the sugar which uniformly flavors the dough.
    Blended together, the cookie dough will be pale and crumbly. Squeeze a handful of crumbles in your palm – if the dough holds together then you’re on the right track!
    Pat the dough evenly in a buttered dish. The dough will turn lightly golden at the edges as it bakes, but the middle should still remain pale – these are soft baked for a thick, chewy texture.
    The buttercream is thick and fluffy, and so tangy with lemon zest and freshly squeezed juice – yum!
    When the cookie portion is completely cool, spread the billowy frosting evenly over the surface.
    Just look at that frosting to cookie ratio! I’d say that’s about 50/50, which is about right for buttercream lovers (me)!
    This kind of baked good is cute, tasty, and practically made to be shared (in normal circumstances they are SO bake sale-worthy!). So, I’m eager to find a way to safely share baked goods like these with friends and family during this time, and with careful packaging and a doorstep delivery I believe it is possible. I have a little more research to do, and I hope to post my findings and methods here!Stay well! xo

    Lemon Sugar Cookie BarsYields 15 servingsLemon cookie1 cup (200g) granulated sugarZest of one lemon (about 1 tablespoon)2 1/2 cups (300g) all-purpose flour1/2 teaspoon baking powder1/2 teaspoon salt1/2 cup (113g) unsalted butter, softened1 egg1 tablespoon sour cream or plain yogurt1 tablespoon lemon juice1 teaspoon vanilla extractLemon buttercream1/2 cup (113g) unsalted butter, softened4 cups (450g) powdered sugar3 tablespoons lemon juiceZest of one lemon (about 1 tablespoon)Milk or cream, to thin1/4 teaspoon yellow gel food colorMixed pastel rainbow sprinklesPreheat oven to 350°F. Grease a 13×9-inch baking dish.Combine the sugar and lemon zest in a medium bowl. Use your fingertips to blend the zest into the sugar until the zest is well dispersed and the sugar is fragrant with lemon.In a separate mixing bowl, combine the flour, baking powder and salt. Whisk to combine.In the bowl of an electric mixer, beat together butter and lemon sugar until creamy. Add the egg, sour cream, lemon juice, and extract. Beat to combine. Mix in the remaining confectioners’ sugar, adding the milk or cream to thin the mixture to spreading consistency. Beat until light and fluffy, about 3 minutes. Add gel food color and whip until a consistent bright yellow color is achieved.Spread the frosting evenly over the cooled cookie in the pan. Cover with sprinkles if desired. Let stand until set, about 10-15 minutes, or chill in the refrigerator until the frosting is firm. Cut into squares before serving. Store cookies in an airtight container for optimal freshness.
